Hindsight is a great teacher, more so if you prepare well for it. Keeping records from the beginning minimises the burden of reviewing experiences at semesters's end - and facilitates working them into a competitive CV.

What kind of record-keeping? For instance: Jot down student/subject coordinator praise, as soon as you receive it - it's so easy to forget the good stuff. Note your impressions after trying an innovative teaching tactic (what worked, what needs changing for next time...). Keep a tally of your informal contributions to academic community, e.g. informal mentoring of grad students, attendance at T&L committee or program meetings and training seminars, invited article peer reviews for a journal, etc. These experiences can all translate into robust lines on a CV - but only if you remember you had them.
