Remove and discard the stems, then finely chop the tops; set aside. Scoop out the seeds and as much of the membrane as you can. Place in a plastic bag or other fridge container.<br><br>Heat 2 tablespoons of the olive oil in a large skillet over medium-high heat. Add the beef, season with salt and pepper and cook, breaking up the lumps, until the meat is cooked through. Remove to a plate.<br><br>Add a little more olive oil to the pan. Add the onions and chopped peppers and cook until beginning to soften, 3 to 4 minutes. Add the garlic and zucchini and cook for another minute. Add the tomatoes and season with salt and pepper. Cook until everything is heated through, then stir in the beef and rice. Taste and adjust the seasoning. Stir in 1 1/2 cups of the cheese. Allow the mixture to cool and store it in a fridge container. Store the extra cheese in a small container. (All ingredients can stay in the fridge for up to 3 days.)<br><br>When you're ready to make dinner, preheat the oven to 350 degrees F.<br><br>Place the peppers cut-side up in a baking dish just large enough to hold them upright. Fill the peppers with the rice mixture and top each with a sprinkle of the remaining 1/2 cup cheese. Pour a small amount of water into the bottom of the baking dish. Cover with foil and bake for 30 minutes. Uncover and bake until the peppers are soft and the cheese is melted and lightly browned, another 15 to 20 minutes.<br><br>Serve piping hot!</div>]]></description>

Add the flour to the liquid left in the pan and whisk until the flour is absorbed.<br><br></li><li><br>Whisk in the thyme, rosemary and salt and pepper and continue to toast the flour for about one more minute, whisking constantly.<br><br></li><li><br>Slowly add the wine and whisk as you add it to prevent lumps.<br><br></li><li><br>Add the chicken stock slowly, whisking as you add it to break up any lumps that form.<br><br></li><li><br>Let the sauce bubble away, whisking gently as it cooks for about 4 minutes.<br><br></li><li><br>Add the potatoes and carrots back into the pan, nestling them into the sauce until they're submerged.<br><br></li><li><br>Add the chicken pieces into the sauce as well, nestling them into the sauce and vegetables.<br><br></li><li><br>Cover the pan with the lid and roast for about 35-40 minutes at 325 degrees Fahrenheit or until the chicken is cooked through to an internal temperature of 165 degrees Fahrenheit (74 Celsius) and the potatoes are tender.<br><br></li><li><br>Remove the pan from the oven when the chicken is cooked through and allow it to rest, covered, for about 5 minutes before serving.<br><br></li></ol>]]></description>

Set aside.<br><br></div><div><strong>Start Your Potatoes</strong></div><ol><li><br>Place chopped potatoes in a medium pot and cover with cold water. Add 1/4 teaspoon salt. Bring potatoes to a simmer and cook until fork-tender, 10 to 15 minutes. Drain, cover, and set aside.</li></ol><div><strong>Make the Filling</strong></div><ol><li><br>While your potatoes cook, in a medium skillet over medium heat, cook ground beef until well-browned, breaking up the meat as you go. Drain fat and transfer hamburger to a plate. </li><li><br>Return the pan to the stove and heat oil over medium heat. Add onions and carrot and cook until the onions begin to soften and turn translucent around the edges, about 5 minutes. Add garlic and thyme and cook for 30 seconds.<br><br></li><li><br>Stir in flour and ketchup/tomato paste and cook for 1 minute. Slowly whisk in the chicken broth and Worcestershire sauce. Bring to a simmer and cook for 3 to 5 minutes, until thickened. Remove from heat and stir in hamburger, peas, and salt and pepper to taste. Transfer the mixture into your prepared baking dish, smooth into an even layer, and set aside.</li></ol><div><strong>Finish Potatoes</strong></div><ol><li><br>Use a fork or potato masher to mash potatoes until smooth. Add butter and stir until butter is completely incorporated. Repeat with the milk/cream. Salt and pepper to taste. Finally, add the egg yolk and stir until well-combined. Spoon potatoes over your meat mixture and spread evenly over the top. If your dish is very full, place it on a baking sheet to catch any drips while it cooks.</li><li><br>Bake for 20 to 25 minutes, until the potatoes are lightly golden. Allow to cool for 10 to 15 minutes before serving, and enjoy!<br><br></li></ol>]]></description>

Season shrimp with salt and pepper and fry for 1-2 minutes on each side, until just cooked through and pink. Transfer to a bowl; set aside.</li><li>Melt the butter in the same skillet. Sauté garlic until fragrant (about 30 seconds). Pour in the white wine or broth; allow to reduce to half while scraping any bits off of the bottom of the pan.</li><li>Reduce heat to low-medium heat, add the cream and bring to a gentle simmer, while stirring occasionally. Season with salt and pepper to your taste.</li><li>Add the parmesan cheese and allow sauce to gently simmer for a further minute or so until the cheese melts and sauce thickens.</li><li>Add the shrimp back into the pan, sprinkle with parsley. Taste test sauce and adjust salt and pepper, if needed.</li><li>Serve over pasta, rice or steamed veg.</li></ul><div><strong><br>Notes</strong></div><div>*Use a good quality dry white wine such as a pinot griot or chardonnay.White wine can also be substituted for chicken broth or left out completely. The flavour in the sauce will be altered.**I use reduced fat cream (or light cream) for this recipe. Substitute with half and half if you wish, being careful not to bring the sauce to a boil or it may curdle. You can also use evaporated milk as a low calorie substitution.Heavy or thickened cream may also be used and will not require thickening with cornstarch.
