The evaporator is heated by the dry sugar cane, this heat is heating the liquid. They do this to thicken the liquid. Boiling it separates the water left on it. Next this mixture is crystalized. The syrup mixture gets a little bit of already made sugar to kick start the process of crystallization. Then it is moved to a centrifuge where all of the remaining liquid is pushed out.
