"Put your hand down on any counter and you risk being stuck to it by the film of ancient syrup spills, and this is unfortunate because hands are utensils here, used for scooping up lettuce onto the salad plates..." (paragraph 1).

The terrible conditions in which people are forced to work are awful. By the use of the word "ancient" for the syrup spills, it conveys that the kitchen is rarely cleaned. The "clogged" sinks full of "decomposing lemon wedges" creates a grotesque image that people should not be forced to work in. Using this imagery, she allows the reader to understand how bad these conditions truly are.

Describes these people as brave for working here despite the bad conditions.

"In real life I am moderately brave, but plenty of brave people shed their courage in POW camps, and maybe something similar goes on in the infinitely more congenial milieu of the low-wage American workplace. " (paragraph 18).

She thinks of real-life as separate from working in one of these places, highlighting just how bad it is.
