A second possible day would be a weekday we both plan accordingly on our schedules. 
A possible place would be either at his or my house, we both have been over plenty of times and that would most definitely work. 
A second possible place would be at my store, I have a lot of free time when I don’t have customers or even after hours, and he has visited a few times so I’m sure he wouldn’t mind doing so for this interview. 
Timing would be planning to hang out for a couple of hours and dedicate no more than an hour or so for the interview.

The physical environment would be on two chairs or a couch with a neutral colored background so its focused on the actual person and interview. Time of day won’t really matter because I plan the interview being inside with nice lighting.
I will tell the person to dress however they want and how they usually would dress because the interview is about who they really are, so I wouldn’t want them to feel uncomfortable or not feel like their selves. That goes for the sound of voice also. Of course, I will make sure we both speak up and loud enough to truly capture the interview, but I won’t tell him to try to talk a certain way or anything like that. Gestures and expressions will come natural with the interview.  
Overall, it will all be documented on video, so I can see them all and see how the interview went after.
