~ The classical period was referred to as the dark ages because it was the time where they were transitioning from the Roman Empire to the Modernized Europe. And there was hardly any record of anything, i'm assuming.

~ The peasant would agree to the contract because while they work for the higher social class, then the knights would protect them.
