Tamales have been around as early as 500BC-700BC. The women at the time were in charge of making food for the guys in battle, but they had to make something with all that they had. From then on, the tamale was born. This was good for them because the tamales could be made ahead and packed easily. Many different make different types of tamales, and even though we don't know exactly which culture started it we know that other Spanish cultures followed right after. Tamales can be pork/and or beef. From then on the Spanish cultures have loved tamales, and they are made differently in all the different cultures.

Source: http://www.tamarastamales.com/his.tamale.html
