Erika brought up a good point about students that are colour blind. Here is an article with ideas to help people that are colour blind. You will see from the article that most of the problems are between certain colours or in some cases not seeing colour at all. This means that if you avoid certain colour combinations and make sure that there are strong contrasts between letters and the background ( not as strong as black and white though) then we should be ok:
