To have 3 documentations in each of the 60 objectives, that is 180 documentations over the course of the checkpoint.
If the checkpoint is 14 weeks long, save one week at the end for finalizing - so we're working with 13 weeks.
180 divided by 13 equals 13.8.  That means you'll need to document 14 objectives each week.  If you assign 3 objectives to each activity, that will be 5 activities during the week.

More documenting at fewer times during the checkpoint?
You can also plan a couple of weeks that have activities that include all of the objectives.  Take lots of pictures of the activities during those weeks and document them.  You could do this at the beginning of the checkpoint, the middle of the checkpoint, and at the end of the checkpoint, to get your three documentations.
During one of these times, you can plan for all 60 objectives. If there are 3 objectives assigned to each activity, you will need to document 20 activities. For one week, that is 4 activities a day. Over 2 weeks would be 2 activities a day.
