The One Egg Souffle Pancake Recipe (2 small pancakes or 1 big pancake)

1 large egg (room temperature)

2 tbsp plain flour

1 tbsp milk

1.5 tbsp sugar

1/2 tsp vanilla extract

3 - 4 drops of lemon juice / vinegar (for egg stabilization - omittable)
Oil to grease your pan

You need a pan with a lid to cook these well- I recommend looking at the pan before you start.
