Here are a couple which I heard him mention.

1. It may seem naive, but you can't seem to know too much about the person you're interviewing, this gives an almost necessary assumed ignorance to make a scene out of it. Asking questions like "have you been in prison before" knowing he has been in prison, gave Louis Theroux an answer about how the individual was Pablo Escobar's money manager. This helps to get the viewer on board with who is being presented.
2. Louis Theroux also talks about how he is 6ft2 and skinny, and how portraying himself (and also swallowing his pride) in a goofy humble manner cannot only make it more of a humoristic interview, but also allows for a connection of sympathy to be built between him and the person he is interviewing. A good example of this is when he interviews wrestlers and they force him into a work out which is visibly too difficult for him.
3. Building a trust relationship between you and the person you are interviewing to receive an openness from the individual, which will grant you more information. Notes:
Louis Theroux presents each documentary very plainly and with none bias not depending on the subject.
Louis Theroux continues to ask questions to kids with autism who he knows might not answer their question but continues to do so.
He asks very simple and basic questions, like what is autism? How do you understand autism? 
Louis Theroux is dedicated to keeping a sense of formality and seriousness no matter the subject, if its a 6 year old or a 30 year old.
Louis Theroux also understand silence can get more answers than questions do, for example Louis Theroux can ask a question and after receiving the answer he will stay quite until the interviewee gives him more of an answer.
Louis also asks very uncomfortable questions like "is it harder to love him", with possible prefacing that with "this might be a difficult question" to show sympathy to the interviewee who will answer that question.
