1 cup prepared pancake batter box mix
2/3 cup cold seltzer water
Heated griddle
Whisk
Mixing bowl
Spatula
Maple Syrup and butter if desired
In a small mixing bowl first add the cup of box mix powder, then pour the cold seltzer water onto the mix powder. Stir with a whisk just until combined (it is good to see some lumps).
Using a ladle, or by simply pouring the prepared batter from the bowl, put about 3 ounces of batter onto a heated griddle. No need to spray oil on the griddle. A 3 ounce ladle will help achieve more uniform pancakes. However, it doesn't matter if some of the pancakes are a little larger or smaller.
Do not pour a larger pancake than your spatula can flip!
When the bubbles on the outside are set (they don't pop when lightly poked) flip the pancake. Cook until the center is fully set.

1 1/2 cups all purpose flour
3 1/2 teaspoons baking powder
1 teaspoon of salt
1 tablespoon white sugar
1 1/4 cups milk (water may be substituted, seltzer water may be substituted)
1 egg
3 tablespoons melted butter
Place all of the dry ingredients (flour, baking powder, and salt) into a large mixing bowl. Lightly whisk to evenly distribute the dry ingredients. Create a small bowl shape in the center of the dry ingredients and poor all of the wet ingredients (including the sugar) into that bowl shape. Whisk just until the ingredients are combined, some lumps are good to see.
Preheat a griddle and ladle about 3 ounces of batter onto the surface of the griddle. If you do not have a 3 ounce ladle handy, feel free to just pour the batter until it looks like the right size for a pancake. It is not a problem if some pancakes are larger or smaller. If you pour too large of a pancake for your spatula to flip, you will have a problem (and a mess!).
