         <description><![CDATA[<div>The Roman gastronomy changed through the long duration (more than a millennium) of its ancient civilization. Their habits were influenced by the Greek culture, the political changes from monarchy to republic, and from there to empire, and the enormous expansion of the latter, which brought many new culinary habits and cooking techniques of the provinces. At first, the differences between social classes were not as significant, but the distance between them grew along with the empire.<br>Traditionally, in the morning a breakfast was served, the ientaculum; at noon a small lunch, and at sunset the main meal of the day, dinner. Due to the influence of Greek habits and the increase in the import and consumption of foreign foods, dinner increased its size and diversity, and was consumed after noon. La vesperna, a light dinner at sunset, was abandoned; a second breakfast was introduced at noon, the prandium.<br><br>Entertainment<br>During a dinner for guests, musicians, acrobats, poets or dancers performed, and the conversation played an important role. The dances were not usual, because they were considered improper and they did not take with the manners to the table, but during the comissatio this habit was not followed. Leaving the table for bodily needs was considered inappropriate and abstaining was considered highly educated. After the main course, during a break, an offering was made to the Lares, the spirits of the house. This offering usually consisted of meat, cake and wine. The cake was dyed with saffron.<br><br>Entry<br>This part of the food was called gustatio or promulsis. It usually consisted of light and appetizing dishes. The usual drink was the mulsum, a mixture of wine and honey. In large banquets the tickets were served one after the other.<br><br>Main course<br>Many times, an intermediate dish was served before the real caput cenae. The decoration could become more important than the ingredients. The main course commonly consisted of meat.<br><br>Dessert<br>Among the fruits, the grapes were the preferred ones. The Romans distinguished between grapes to make wine and grapes to eat. Raisins were also used. The clams and oysters, which were originally desserts, became inputs. The cakes, made of wheat and usually bathed in honey, had an important role. Certain types of walnuts were also used, being the equivalent of the sweets of the current festivals.</div>]]></description>
