Because they were planting more and more crops, they had more food for the horses. Because of this, they used the horses to plow instead of oxen, resulting in faster production and plowing of crops. This also gave a huge surplus in food and population, helping everybody out.

-First field was planted with crops that provided food, like Wheat or Rye
-Second Field was planted with crops that made the soil more fertile by adding nitrogen, crops like beans lentils and peas
