Some Peruvian food tries to focus on the sweet and sour aspects of food. Some people in peru use a cooking style called "juxtaposition"
<Juc-sta-position>
this style of cooking allows the food to have a good sweet and sour balance, along with a big spice, and can either have a crispy or juicy flavor! [example link]
---------------------------------------------------------
Another big Peruvian aspect is simple potatoes. Peruvian's have over 3,500 different types of potatoes they like to use in cooking! Peru is actually the birthplace of the potato! None of the potatoes have been genetically modified in any way and all are different color, shape, and sizes! They all have different taste too, some are a bit more spicy while others are sweet!
[example link]
---------------------------------------------------------
Peru also has some amazing sweets that I would love to try. While looking for sweets I found the "Pionono" [example] which is what we call a jelly roll! They are considered a party snack and are filled with
"manjar blanco" [example] a sweet cream-like substance that resembles caramel!
--------------------------------------------------------
A weird Peruvian food would be the "Pachamanca", it is the cooking of a guinea pig over a stone fire! You throw spices and herbs onto the guinea pig as you slow cook it over the stones, after you put it on a plate beans, potatoes, or corn are often added to the dish. [example]
---------------------------------------------------------
Nola

A very common food in Chile is Completo - Chilean Hot Dog. This food you can get anywhere in Chile and it is a very tasty hot dog, it ever comes with fresh veggies on it. A strange food that is in Chile is Machas a la Parmesana. I food is strange because it is a clam covered in parmesan and butter. Plus, seasoned with white wine and/or a drop of lemon. A food in Chile that sounds good to me is Chorillana. This food sounds good to me because it is served with fried onions and an egg on top of chips. This combination of foods sound very unusual but it sounds good and I would definitely try it.
