-Trigliceride: One Glycerol head and three fatty acid tails-Cell membrane is made of phospholipids-Three fatty acid tails are made of carbon and hydrogen.-Lots of energy in a triglyceride-Saturated-straight-solid at rt-Unsaturated-kinky tail-liquid at rt-olestra a fat with sucrose(sugar) built around it, feels and tastes like fat but it doesn’t make you any fatter(more that 3 tails “eight to sometimes ten”)-Phospholipids: two fatty acid tails, and one head with a phosphate group(the phosphate group with a negative charge)-is used in membranes they constantly move back and forth allowing oxygen to enter and so2 to exit-Hot- the phospholipid tails begin to fall apart, Cold-the tails are held together by cholesterol in/by the membrane-Cholesterol is essential in maintaining the structural integrity of the cell.
