The Paleolithic period, which means "Old Stone," is characterized by the nomadic nature of human groups and the use of stone as raw material to make tools. One of the highlights of this period is the Victoria Cave (Cartagena), which is located on the San Ginés hill. For years, the Victoria Cave has been internationally recognized as a fossil site that has provided one of the best collections of vertebrate fauna from the Lower Pleistocene.

The Metal Age gets its name from the abundance of metal due to its great hardness, high melting point, and cost. The Argaric culture is also noteworthy; it belongs to the Bronze Age in the Region of Murcia and was discovered in Almería by the Siret brothers. The Argaric society seems to have believed in an afterlife. Many of them were buried with ceramic objects that contained food and personal items, indicating their social status within the settlement.

This period is characterized by the invention of writing. The Iberian civilization is the first to use writing in this territory, leaving a significant "mark of our past." The Iberian society was hierarchical and led by a minor king. Warriors and priests made up the dominant classes. The Lady of Elche is the best example of the influence of the priestly caste in Iberian society, discovered in La Alcudia de Elche (Alicante).

Some typical dishes from the medieval period include:

•Olla podrida: A stew made with various meats (pork, lamb, and beef), vegetables, and chickpeas.

•Ajo cabañil: Lamb cooked in a sauce made of garlic, vinegar, bay leaves, and spices with potatoes.

•Arrope: A sweet dish made from grape juice and fruits.

A curious fact is that it is said that around this time, Alfonso X invented what we now know as “tapas.”
