why? because The speaker and his siblings were looking for sweet./good but then found Sap/Bad.  All the speaker's life the father was grumpy,strict! The whole life the chickadees  were looking from sap but found Sap that is bad!
the father is keeping the sweet away from them. They are concerned about thee Father. The sap was hiding inside the father, and when they found it, i think it triggered something in the father. which made them concerned! the sap wasn't there until recently!
