The heating is done gently such that small bubbles will rise to the surface and break gently. Heat is transferred to the food through convection.<br>Advantages:<br>Healthy method of cooking as little or no oil is used. Food becomes soft and digestible. Soft food does not break apart easily.<br>Disadvantages:<br>Require more energy due to the longer cooking time</div>]]></description>
