1914- James L. Kraft’s business, J.L. Kraft & Bros. Company, opened its first processed cheese factory in Illinois

The cheese he made was not considered fancy cheese, it was a cheap, convenient alternative to expensive cheeses such as cheddar and swiss.

Although this cheese was not a delicacy, it became extremely popular leading up to World War II. At this time, government handbooks ordered soldiers to eat “American cheese filling sandwiches,” which were something like an open face grilled cheese.

1949- Kraft Bros. began selling what we now know as Kraft Singles: individually packaged slices of American cheese.

As new convenience cheese was becoming available to the public, cheese sandwiches were gaining popularity and innovation.

People started topping these American sandwiches with a second slice of bread, to fill the consumer more and introduce what we think of as grilled cheese in the present day.

1960s- Grilled cheese gains popularity

In 1965, Kraft Bros. Singles began being sold in supermarkets.

Grilled cheese wasn’t a commonplace name yet, names like “toasted cheese” and “melted cheese sandwich” were more widely used.

As early as 1902 and recurring in the years following, different recipes for the basic grilled cheese sandwich have been found in cookbooks.

The name “grilled cheese” was first used in print in the 1960s.

Today- Grilled cheese has taken on a new gourmet life

Expensive grilled cheese sandwiches are sold around the world now for a variety of reasons.

Grilling special images into the bread of a grilled cheese has been popular in the food art world.

It’s not just made with Kraft Singles anymore, these sandwiches can be filled with anything, from fancy cheeses to vegetables, special condiments to complimentary meats, and even macaroni and cheese and spaghetti!

In our ever changing world, chefs will find it hard to ever run out of ideas for how to prepare a simple American staple sandwich.
