💡 Pro Tips

• ▢2 sticks unsalted butter, at room temperature (8 ounces)

• ▢1/2 cup sugar

• ▢1/4 cup maple sugar

• ▢1/2 teaspoon vanilla extract

• ▢A pinch of salt

• ▢1 cup all-purpose or King Arthur's "white whole wheat" flour

• ▢1 cup acorn flour

Instructions 

• Put the butter in a large bowl and add the sugars. Use a fork or spoon to mix them together until well combined. Add the vanilla extract.

• In another bowl, mix the salt and the flours with a whisk until combined. Pour the flour mixture into the bowl with the butter and sugar and mix well with the fork or spoon. The dough will come together quickly, but will be sticky. Don't overwork it, but be sure you don't have hidden blobs of butter in your dough.

• Shape the dough into a disk, cover with plastic wrap and set in the freezer about 2 hours, and up to overnight in the fridge. The dough must be very cold for this to work, or the cookies will collapse.

• When you are ready to bake, preheat the oven to 350°F. Flatten the disk of dough to about 1/2 inch thick and cut into cookies. I used a 2-inch cutter, but any sort of cutter would do. An acorn-shaped one would be cute. Keep soing this, reshaping the dough, until you've used it all.

• Arrange the cookies on an ungreased baking sheet and bake for 23 to 26 minutes, or until the edges of the cookies just begin to brown.

By the time the infection swept through the cities, Kiera had already learned how to be invisible.

She had been living in a small mountain cabin for two months when the radio went quiet. At first, she thought it was just another outage. Then came the night she saw the first one—its shuffling silhouette against the treeline, its jaw slack and wet. She didn’t wait to learn if it had seen her. She ran.

The mountains were both her cage and her shield. Days were spent moving between abandoned campsites and looted ranger stations, scavenging for anything that hadn’t rotted or rusted. She learned quickly: never sleep in the same place twice, never fire a gun unless there’s no other choice, and always listen before you look.

Food was the hardest part. After three weeks of stale crackers and rainwater, she found the orchard.

It was tucked in a narrow valley, half-wild and overgrown. Apples, small and tart, still clung to twisted branches. The air was heavy with the smell of fermentation—sweet and sharp. She almost cried when she bit into one. She made camp in the ruins of an old farmhouse, its windows long gone but its walls still standing.

Every night, she climbed into the attic with her pack and crossbow, watching the treeline for movement. The orchard drew them sometimes—maybe the smell, maybe the memory of life. She kept count. Ten in the first month. Seven in the next. By the third month, only three came. She didn’t know if it meant there were fewer of them or fewer of us.

Winter came, hard and unforgiving. The apples turned to frostbitten ghosts. Kiera set traps for rabbits and stripped bark from birch trees for tea. Her hands cracked from the cold, but she kept the fire low, knowing smoke was a signal.

When the first voice called her name, she thought it was a trick of the wind. Then it called again—lower, steadier.

It was a man, gaunt but not infected, holding a white cloth above his head. He said he’d been tracking the orchard for weeks. He said there were others.

Kiera didn’t answer right away. She just stood there, the weight of months pressing on her shoulders, the silence of the dead pressing in from the trees. She thought about the rules she’d made—the ones that kept her alive.

And then she thought about the orchard in spring.

She lowered the crossbow.
