Jolien - The best soil would sandy-loam soil, mixed with iron sandstone and silex and with a very good drainage. These stones that are present on the surface area have the advantage of warm up during sunny moments. You will create warmer moments, which results in better ripening. This soil works out great for Chardonnay, Pinot Noir, Pinot Gris, Acolon, Sieger, Auxerrois.. to get their full uptake of nutrietiens.

Because of the cool climate & thanks to the cool nights, and the longer ripening period. The wines in the Heuvelland area will have a typical aromatic and fresh character.

Jolien - The resulting styles of the wine from Heuvelland:

Can be still red & white wines + sparkles wines. Heuvelland has a cool maritime climate. In cool climates like heuvelland, it is perfect to make these kind of sparkling wines.

The combination of the (a) terroir, (b) the mountains and the (c) sea are crucial factors in allowing the grapes to ripen perfectly. (c) Due to the location close to the North Sea, the grapes will ripen slowly. The proximity of the North Seas ensures that this mild sea air tempers large temperature fluctuations. (b) Because of the hillside, the vines are better protected against frost and excessively high Temperatures. (a). And the sandy lime soils make sure that the surface is warming up the vines because of capturing the sun with a good drainage so that the grapes can ripen in late October. The style of these types of wines in cool climates will result in wines with more moderate alcohol levels , but offer more finesse and refinement. Fresh - pure & aromatic.

Auxerrois blanc is a frequent growing grape in Heuvelland. It is an early-ripened grape, moderate vigorous vine. Due to cool climate with some maritime influences and the location near the North Sea and on the small slopes less than 10 % inclination Auxerrois will ripen slowly. But it will ripen well as the soil compounds (loam, iron sandstone) will help ripening process. Also, the proximity of Gulf stream has a significant warming influence. The frequent rainfall can be an issue to struggle as it can cause downy mildew if the temperatures are also around 20C in this case the right canopy management: open canopy and good drainage would help and as an additional solution use of copper sulfate and lime mixture (Bordeaux mixture) would be possible but only for conventional vinery. The right canopy management will also help to protect grapes form powdery mildew during the warmer periods of summer, as the powdery mildew can propone if there is a lot of shade and density of leaves, and the temperature is around 25C. Other possible disease is Grey Rot or Botryris Cinerea which can cause damage to the fruit and loss of yield. To combat it we should manage the canopy removing the leaves and making the canopy open, using some fungicides, using antagonistic bacteria to create a biological control.

The best harvesting moments are from September till midden October, but we must control the weather forecast, measure potential alcohol in the grape, sugar levels to manage the right harvest time. In Heuvelland the potential alcohol measures are: 9,5 - 11 %, as it has cool climate, and the sugar level has to be minimum 19 Brix for still wine.

Auxerroi grape has small bunches and berries there for we can´t expect very aromatic type of grape as there is less pulp and skin. The wine based on this grape is fruity with medium intensity of aromas and flavours of green apple and pear and will be blended with other varieties as Chardonnay, Pinot Blanc or Pinot Gris and etc. to create more complexity by adding structure and other aromas of for example some tropical fruit, stone fruit, blossom and sometimes if the wine style needs it brioche and some vanilla depending on MLF and oak ageing of some of the components.
Most wines are still dry white wines but htere is a possibility to produce sparkling wines as Auxerrois can be added to the blend of sparkling wine in Heuvelland.

Regent is a frequent growing grape in Heuvelland. Originally from Germany. It´s a mid-ripened grape, very fertile and also vigorous. Due to cool climate with some maritime influences and the location near the North Sea and on the small slopes less than 10 % inclination Regent will ripen slowly. But it will ripen well as the soil compounds (loam, iron sandstone) will help ripening process as the iron sand stone will retain the warmth and give it back to the grape during the night. Also, the proximity of Golf stream has a significant warming influence. Regent grape is very susceptible to Grey Rot or Botryris Cinerea which can cause damage to the fruit and loss of yield. To combat it we should manage the canopy removing the leaves and making the canopy open, using some fungicides, using antagonistic bacteria to create a biological control.

The best harvesting moment is October, but we must control the weather forecast, measure potential alcohol in the grape, sugar levels to manage the right harvest time. The colour is medium intensity and for the red wines it will be mostly ruby if it isn´t very complex for red wine or pink-orange for a rosé. The wine based on this grape is fruity with medium + intensity of aromas and flavours of red cherry and blackcurrant, wild berries and very typical cabbage aroma which is not very pleasant for many people. It will be blended with other varieties as Acolon, Rondo, etc. to create more complexity by adding structure and other aromas of for example some floral aromas to hide the cabbage aroma. Red wine will have some oak ageing between 6 and 12 months, this will give smooth medium tannins and complexity of aromas and flavours of chocolate, spicy, vanilla. This wine will not have a lot of potential for aging in the bottle, but it will be a wine the consumer can enjoy for 5 years as it meant to be fruity.

Jolien
Grape - The Chardonnay grape variety produces some of the world's most popular white wines, in styles that range from rich and oaky to crisp, mouthwatering, and mineral. Chardonnay can taste different, depending on where it grows and how it's made. But typically, Chardonnay is a dry, medium- to full-bodied wine with moderate acidity and alcohol. Its flavors range from apple and lemon to papaya and pineapple, and it also shows notes of vanilla when it's aged with oak.
Wines that have gone through malolactic fermentation tend to have softer acidity and fruit flavors with buttery mouthfeel and hazelnut notes

Chardonnay is an important component of many sparkling wines.

Growing Area -

It can grow In cold and warm climates. Chardonnay wine tends to be medium to full body with lower noticeable acidity and flavors of tropical fruits In warmer locations .

Type - Different styles can be found
1. creamy oaked - more full-bodied white, Wines range in taste from a richer profile of lush tropical fruit, grilled pineapple, butterscotch and vanilla to a lighter profile of poached pear, lemon curd, baked apple and a textural chalky minerality
2. citrus - unoaked - a light white wine with floral and citrus flavors. Wines range in taste from a fruitier profile of yellow apple, fresh pineapple and mango to a leaner, more floral profile of white flowers, green apple, pear and citrus peel.
3. sparkling chardonnay - Sparkling wines made with Chardonnay are typically called Blanc de Blancs which means “white of whites” and indicates the color of the grapes used to make the wine. Blanc de Blancs wines range in taste from a richer profile of Meyer lemon, honeycomb, yellow apple, toasted vanilla and hazelnut to a leaner profile of lemon zest, minerals, lime and honeysuckle.

As for the ampelographic characteristics of Chardonnay, the grape bunch is medium-sized, the leaves are round-shaped, and the grape peel is golden yellow.
