Leatherwood Honey is a Tasmanian food that the honey bees produce from the nectar of the Leatherwood plants' flower. This honey is used to add in an extra flavour to a cake, muffin, coffee, and tea recipes. Bees are encouraged to collect nectar mainly from Leatherwoods in Tasmania in order to produce a special, famous and gourmet type of honey called Leatherwood Honey. The older the Leatherwood tree, the more flowers it produces and the more nectar it makes for bees to collect and turn into honey. The Leatherwood trees like the cooler climate in Tasmania and thrive as a result. The lower population of the cities and towns in Tasmania are helpful for the bees as well as they are less interrupted in their work.
