El texto dice que la comida es un negocio impredecibe y con riesgos pero también tiene gran potencial. Actualmente, la cocina es más exacta en cuanto a su origen étnico y regional; ofrece nuevas perspectivas en cuanto al estilo y el sabor como la gastronomía molecular. La relación entre la comida y la economía es compleja pero es un recordatorio de las necesidades biológicas; psicológicas y sociales.

En el documento que hemos visto en clase, nos muestra la relación entre la cultura y la gastronomía, por ejemplo el festival filmandcook, un festival de cine y música, o cenas con ópera. Sin embargo, algunas persnas no consideran que es cultura y por eso, los premios nacional de gastronomía son otorgados por el ministerio de turismo, y no por el de cultura.
