People gather those fruits by hand and use two ways to separate seeds from covering. One way is wet process, fresh fruits are pulped by a pulping machine. After that, seed will be dried to 12%moisture by sun or by driers. Another way is dry process. People dried seeds in sun or with driers and release 12% water content from seed covering mechanically. Roasting seeds at 220-230 could effect its taste after loss 14%-23% weight and change it color to rich brown.
