-Very local Cantonese food and beverages. Not fancy at all,service not super friendly, but great Hong Kong experience (is open 24/7)

 City Hall Maxim's Palace:
 traditional Cantonese breakfast (but unfortunately, not for early breakfasts, only opens at 11 am)

 -great food, you have to try the Siu Long Bao, best ones in town. Unfortunately, it is pretty much impossible to reserve a table, but the food is delicious.

Man Mo Cafe:

-my cousin's favourite restaurant. They serve fusion Dim Sum.

Zaks:

-a bit out of the way, you need to take a ferry to Discovery Bay. You can have dinner outside overlooking the skyline of Hong Kong (if the weather allows it) and food is amaying, especially the deserts :). They serve Western food.

There are lot of of breakfast buffets in all of the fancy Hotels, they should be open around 8. If you are just lookinf for a casual breakfast, there are lots of small soup kitchens or Dim Sum places around pretty much every corner. 

As for sight-seeing, you should definitely go up the Victoria Peak, you can either hike up, take a bus, a taxi or the Peak tram that leaves in Admiralty. You should only go up, if the weather is ok.

You can also explore an island, the most developed one is Discovery Bay, you can go to the beach, go on a lovely hike or just sit down in a nice cafe. Other, not so developed but beautiful island are Lamma Island or Cheung Chau Island. If you go to Lamma, you should get some sea food. There are fairly frequent ferries from the Central Pier, that take you to these islands.

Another sight you could visit is the big Buddha on Landau Island. You first take the MTR to Tung Chung and then go on a cable car up, over the sea and up the mountains. There is a little pretty touristy village that you can check out. If you have some time you should then go to see the pink dolphins in a beautiful old fishing village called Tai O.

You should also take the Star Ferry, that goes between Tsim Sha Tsui and Central (the Central Ferry Pier). The waterfront in Tsim Sha Tsui is pretty nice, too epecially at 8pm. There is a daily lasor show called: Symphony of Lights.

 

There are quite a lot of markets, similar to the night market in Tai Dong, but coming from China they are pretty expensive and not super interesting.
