We are doing green schools theme - global citizenship litter and waste. I am the green schools coordinator so I will organise for any suitable class group or just with 'the green team' - made up of 6 children age 7-12 including a boy with autism.
We will have a food theme - look at reducing waste packaging in food, reducing food waste and eating locally grown food.
It would be good to link with schools to find out which foods they grow locally and if the children like to eat them.
In our school 2 parents have helped to plant a vegetable garden in school and the children are helping. In the past we have also interviewed grandparents about what they grew when they were young. We could all do this and exchange information to develop the project if people are interested

At the moment a class in our school, age of children = 7, is making a photo book where they take turns bringing a teddy home and taking pictures and writing about what they did. The teddy is a young historic figure ' St. Finian', a famous monk from 1500 years ago. Our school is named after this saint. He had one of the first monastaries in Ireland. Irish monks went to the continent of Europe. It might be nice to follow the journey of the monks and to find schools where they went to and share the photo book digitally with them and maybe they could share something similar with us. We could learn a lot about life for children in other European countries today.
