This is a problem because astronauts are eating too much freeze-dried food. Some research studies have shown that freeze-drying food reduces ascorbic acid levels and the amount of polyphenol, a cell-protecting chemical found in berries, according to livestrong.com. Fresh food is good for you because it is rich in nutrients and vitamins. Freeze dried food is low in certain vitamins. Although it is low in certain vitamins, it is rich in antioxidants and fiber according to the website goaskalice.columbia.edu so at least it still has some nutritional value. Astronauts tried to address the lack of fresh food by growing their own plants in space. They grew red romaine lettuce and, according to the reactions of astronauts Scott Kelly, Kjell Lindgren, and Kimiya Yui, it tasted pretty good. SOLUTION Our solution is to use a form of gardening called hydroponics. Hydroponics is the cultivation of plants by placing the roots in liquid nutrient solutions rather than in soil. To do this, first we will add a greenhouse to the International Space Station (ISS) that will provide the proper environment to grow fresh plants. In the greenhouse, we will have small chambers containing water that has been infused with all of the nutrients that the plant will need to grow. We will insert a seed inside the water, provide light, and allow the plant to grow. The seed will probably be that of a lentil, a pea, or a bean because they don't use as much water as most fruit.Our team watched a video on the internet about how astronauts on the International Space Station (ISS) did experiments with water to see how it behaved in microgravity. The video can be found on the following website: https://www.theguardian.com/science/video/2014/nov/07/water-bubble-space-science-video.This video answered one of our questions because we saw that, after the astronauts inserted a GoPro camera into a large water bubble, the GoPro remained inside the bubble as it floated around in zero gravity due to the surface tension that held the large bubble of water together. This helped us confirm that the seed would stay in the water bubble once something was placed in it. We envision that the water chambers would be less than one cubic foot in size with small openings for the plants to grow out of the chamber if necessary.
