Hi I'm Frankie and I started to like cooking a while ago from watching the Food Network because it's the best channel. (Chopped and Cutthroat Kitchen is where it's at btw). I also love to play tennis. I've been playing for 9 years, and I'll be attending at Ramapo college next year as part of the team! I'm also really into yoga and love to do it, even though I just started. Also, my favorite food in the world is pizza because it is amazing and nobody can say otherwise. I'm taking this class because I want to learn more about cooking and how to make great food because I think I'm a pro from the amount of cooking shows I watch. :)

7 Layer Mexican Dip- Blog Entry #2

We made a 7 layer mexican dip that used refried beans, homemade guacomole, shredded cheese, green onion and sour cream. We worked really well together, we all collaborated and had different responsibilities that we handled well. Our final product was delicious, and I really enjoyed eating it and making it. I really loved the cookie dough dip, but not so much the spinach and artichoke dip. I did not try the pizza or chili dip because I do not eat the meat in them.

We made a valentines day brownie that was gluten free. We garnished it with a hardened chocolate heart topped with a homemade whip cream and crushed sweetheart candies. Also a hershey kiss on the brownie. Then on the plate (after dying the whip cream hot pink) we put the whip cream as a decoration.

My group and I made an apple bowl filled with crinkle cut carrots and topped with a cucumber slinky. Surrounding it we made cucumbers filled with carrots and small tater tots which were fried potato balls. We used the curly fry tool to make the cucumber slinky, and to make the apple bowl we used the triangle shaped knife to create a zig zag effect.

Spices and Herbs Butter on Biscuits- Blog Entry #5

To experiment, my group and I tried many different spices to make a spicy butter. We tried Cayenne pepper, Paprika and Red Pepper and Chili Powder but we did not like that combination because it was not spicy enough and it was a little too much of a smoky favor. Then we swapped the paprika for chives and the chili powder for caraway seed and also added garlic powder and we loved this combination. The cayenne pepper and garlic powder added a great spice that was subtle at first then really came through at the end. The cayenne pepper also added a nice red color that popped. To garnish we added a piece of cilantro on top and chopped cilantro around it which made it look classy.

Tilapia Cooking Methods- Blog Entry #6

We tried two different cooking methods, baking and pan fried for our tilapia. Our flavor combination involved using our spices butter as a dry rub for baking and using it to seat the fish in the pan. Our butter had garlic, cayenne, caraway seed and chives which is a savory flavor combination. Baking made the fish very flaky and dry but it held more flavor and it was more concentrated flavor. Pan frying the fish was my favorite because the moisture was held in the fish and it tasted a little more burned. I liked the pan frying better because the fish fell of the fork and it tasted alittle smoky and i could taste the cayenne spice more. To garnish we used rosemary to add freshness to the flavor as well.

We chose to make St. Patrick's cupcakes. We used white cake mix and added green food coloring to make it a vibrant green cupcake. Our frosting was lucky charms themed with melted marshmallow topping and lucky charms marshmallow on top to add crunch and to garnish. I loved the topping because it was sweet, yet not too sweet and the marshmallow with the lucky charms tasted so good.

Parsley and Garlic Chicken- Blog Entry #8

We chose to make a garlic and parsley chicken. What we used was thinly sliced chicken breast, cut into small pieces battered in flour, parsley, garlic, salt and pepper. Then we put it in a pan and pan fried it with some lemon and olive oil. To serve we put it all in a bowl with lemon wedges surrounding it. I did not try our chicken (cause boo animal cruelty!) but from what everyone said, the chicken was moist and had great flavor from the garlic. From just smelling it in the pan I could tell it tasted amazing, with the strong parsley flavor then hint of freshness from the lemon.

Our goal was to create an appetizer that was completely edible, even the thing that was holding it together. My groups original plan was a tortilla taco bowl however our tortillas came out smaller than expected so we ended up making a taco (still all completely edible, no plate or utensil needed). For our taco filling we added ground beef and a sour cream that had taco seasoning which included cumin, paprika and cayenne pepper. Then to garnish we did variations involving green bell pepper, iceberg lettuce and tomato.
