Holden realizes that by running away, he's exposing Phoebe to a harsh part of life, where people lie about what they say they're going to do and leave when things get difficult. Phoebe even says that she wouldn't do the play she was excited about just so she could run away with Holden. For Holden that seems to be the deal breaker, that is the signal that Phoebe is losing her innocent nature. Holden also is still processing one of the most important losses in the story, his brother Allie who died 3 years ago. Going back to all the chapters in the book, each time Holden wants to hide from someone or something he would wear his red hunting hat, it protects him but it is also a kind of disconnection to the world. In another word the hunting hat is Holden's alienation from society and his intentional isolation from people. Some of the examples when Holden is wearing it is when he has a fight with Stradlater. Later he also gave his hat to his sister. I think Holden also thinks that red hunting is protecting innocent children, or childhood.
