You first have to change the camera to aperture priority by turning the setting dial then you could change the number for the aperture. When you change it, it depends what type of picture you want.

 2. What happens to photographs when the aperture changes?

When the aperture changes you get some blurry background effect.

 3. Why would you use Aperture priority and when is it best to use it? 
 We would use aperture priority when we want to focused in an object and would have a blur effect in the background for we could focused in the main thing.
The best time to use aperture priority is when you want to focused in a specific thing like a baby when it eats.
