Keep a record of meetings so mentees can see progress. It's quite uplifting to remind trainees that only a few short weeks ago they were worrying about some aspect of their training and that now they have moved on. When they feel that they're not getting anywhere you can massage their egos a bit and show them the movements they have made.

Don’t expect your mentee to do something you are not prepared to do; don’t tell your mentee not to do something they observe you doing. Leading by example is powerful and effective. Mentees who observe you taking shortcuts will copy you: they expect that the way you do things is “THE way” to do things. Similarly they are unlikely to follow advice if they find that it’s a case of “do as I say not do as I do”.

Like a lot of others here I advocate empathy - I think it's so important especially for new teachers. The experience of standing in front of a class for the first time can be nerve wracking and bring up all sorts of confidence/self esteem related issues. But the mentor needs to make sure that allowing the mentee to talk about that fear is balanced with addressing it. A good way is to ask the mentee to identify a step they are willing to take. If they are having a crisis of confidence, they might be afraid to teach a whole lesson but they might be willing to teach a section of it.

The best way to do this is to talk to them, not just about school but about who they are as a person, their hobbies and interests etc. Once they can talk to you, you have the basis of a good working relationship, one that has reciprocal trust. As a mentor you need to be approachable and show that you care, in teaching this should come naturally. Be yourself, be professional and make time for them.
