         <title>Christmas dishes (by Kate)</title>

         <description><![CDATA[<div>Ukrainian people love Christmas. We celebrate it on the 7th of January. Traditionaly, for Christmas in Ukraine each family cooks 12 dishes. They symbolize 12 apostles and 12 months of the year. The dishes which everyone has got on the Christmas table are kutya and uzvar. Kutya is wheat or barley with honey, poppy seeds and raisins. Every family member needs to eat minimum 2 full spoons of kutya for christmas. And uzvar is a decoction with dried fruits. Each family cooks different dished instead of kutya and uzvar and  the most popular between them are golubtsy (meat stuffing with rice in cabbage leaves), baked potato with dill, baked apples, salad "Vinegret", vareniky with cherries amd meatless soup "Borshch".</div><div>   My favourite Christmas dishes are uzvar, vareniky with cherries and stollen. I really love these dishes because they are very delicious and interesting I guess.</div><div>   For you to feel all the taste of one of these dishes I want to share with you the recipe of the pie called stollen. The first thing you need to do is to dunk raisins and candieds in rum for 6-12 hours. For the dough first mix 150g of sugar, some vanillin, lemon zest and a pinch of salt. In another bowl mix 100ml of milk with 2 eggs. Then make a sponge: mix 100ml of warm milk with 1 tea spoon of dry yeast, 2 tablespoons of flour and 1 tablespoon of sugar. Let it get up for 20 minutes. After that make a dough: mix the mix of milk and eggs, sugar with spices, 150g of heated to the room temperature butter and sponge - with 500g of flour. Knead the dough for 10 minutes and after that put it to the warm place for 2 hours. After that mix the dough with raisins and candies, divide it into 2 identical parts. Roll out each part into the oval and make each of them like this: fold it in half and then fold in half the half of the upper layer. Put them on the greased with the oil parchment and let them "have a rest" for 30-40 minutes. Bake your stollens for about 1 hour with the temperature of 160°. When it will be baked you can grease it with melted butter until it is hot. I hope you will enjoy this recipe as I do!</div><div> </div>]]></description>

         <title>Christmas traditional food</title>

         <description><![CDATA[<div><br>  Christmas in Ukraine is a very nice holiday. Ukrainian Christmas will be in the house on January 7th each year. The period from January 7 to January 14 is a festive week in Ukraine. During this week people often dress up in traditional clothes (Vyshyvanka), visit their relatives, sing Christmas carols (Kolyadka), and have festive dinners with the family.<br>  Also important are the dishes served on the table on this day. Each of them is important.12 dishes for the Christmas table symbolize the twelve apostles and twelve months in a year. The most important of these are kutya and uzvar. Other dishes are individual, but they must be lean, as fasting will last until Christmas.<br>  1. Kutya - cooked wheat with honey and poppy is an act of sacrifice to God, because wheat with honey is a sacred part of the Holy Supper. Poppy is a symbol of martyrdom. Honey is a symbol of purity, God's word.<br>2. Pea is a symbol of God's spring, which is always reborn in man after a decline.<br>3. Kapusniak - Cabbage acts as a symbol of simplicity and at the same time strength.<br>4. Borsch is a symbol of the celebration of goodness. Since the mistress is preparing a lumpy borsch from the various simple plants that the land gives her, the same Christian exfoliate his will from the simple everyday small, healthy practices that he has gained from a family home or a good Christian society. Christmas soup is flavored with pre-cooked beans, therefore it has a dark red color.<br>5. Golubzi - the name of this dish indicates its symbolism. Pigeon is a symbol of God's love, a symbol of the Holy Spirit, a symbol of beauty and power derived from the Creator.<br>6. Fish - in early Christianity, the fish was adopted as a symbol of Christ by many Fathers of the Church. The sign of the fish was the first monogram of Christ. Greek abbreviation Ichtios - the name of Jesus is read as "fish". It was the brothers-fishermen who became the first disciples of Jesus, who told them that they would be "fishermen". Believers, the disciples of Christ, like Himself, were likened to fish that are safe only in the water of doctrine. Three interlaced fish or three fish with one head symbolize the Trinity.<br>7. Varenyky - symbolize prosperity. The place of man the Lord has appointed in the kingdom of God, where she feels good "as a dummy in oil".<br>8. Pancakes - a symbol of the sun. The New Sun for Christians is Jesus Christ.<br>9.Porigde  symbolizes the continuation of the family, this is the God's people, which is consolidated around the newborn Jesus. The porridge is a symbol of the general union of people through the consecration of the human race that came to us through the incarnation of the Son of God.<br>10. Pies - a symbol of health and happiness that a person will be able to receive in constant communication with the newborn Jesus.<br>11. Uzvar - represents the life that gives each person. Holy water is a symbol of purification of the body and soul.<br>12. Pampushki - saints in heaven, who believed in Jesus and received eternal life. Their millions, and every person, especially a Christian, is called to a sweet, full-fledged, eternal life. The word "feast" comes from the "holy", and hence the pamphlet is a symbol of the holiday, the joy that God has bestowed on people.<br><br>My favorite Christmas dish are Varenyky. You can make them with potatoes, cabbage, fruit and cheese. My favourite are Varenyky with potatoes. I can cook them myself.<br>The recipe<br>Ingredients:<br>Wheat flour<br>Water<br>Chicken egg<br>Salt<br>Potato<br>Onions Butter<br>Oil<br>How to make:<br>Clean the potato, cut it thoroughly and cook in salted water. Drain the water, put half a butter in a pan and make mashed potatoes. Then cut onion and fry on oil. Sift flour in a bowl and mix it with salt. Add the sweetened to the flour, stir and, stirring constantly and pouring the water, replace the medium density dough. Gently dip the dough and wrap it for 15-20 minutes in a film or balls to make the dough a bit tall and not cured. From the finished dough, cut about a quarter, download from this piece of sausage a thickness of about 3 cm, cut into pieces of a thickness of about 1,3 cm. Keep the rest of the dough in a film. Roll the dough slices into a loose circle. Keep the blank from the dough under a napkin so that they do not dry up. On the middle of the circle, place an incomplete teaspoon of stuffing. The edges of the varenik carefully glean. If desired, you can decorate the edge of the dumplings "bacon".  Dip the dumplings in boiling salted water, stir thoroughly so that they do not stick to the bottom, and cook 2-3 minutes after the expiration. <br><br></div>]]></description>

         <description><![CDATA[<div>  In Ukraine on the Holy supper on Christmas is a meal of 12 ritual dishes. We start to eat when the first star lights up. The main dish is kutya. </div><div>  In my family we don’t cook 12 dishes. Only 4 or 5. It is usually kutya, baked chicken and various salads. </div><div>My family always enjoy having holiday dinner together. </div><div>   My favourite dish is kutya. It consists of poppy, cereal, honey, nuts and raisins. First you need to cook cereal. When cereal is cooked we mix it with poppy , honey and  nuts. It's very tasty.</div>]]></description>

I was very happy because my sister came from Germany to celebrate Christmas with us. (She lives and works there). We cooked a lot of tasty traditional Christmas dishes before the holiday: kutya, varenyky, borsh, uzvar. We also cleaned and decorated our flat and a Xmas tree. In the evening, on Christmas Eve, my grandparents came to us. We had a wonderful celebration together: we ate tasty dishes, danced, sang songs and chatted a lot.
