It is one of the trees with the hardest and most compact wood. It can reach up to 15 meters in height, wide tree crown and thick trunk of twisted aspect. The trunk has a greenish color with brown streaks, very regular and with a fine surface.
It is a hardwood tree and evergreen .
The annual rings of growth are little differentiated and are little visible. 
They can live several hundred years and they are very hurt by the cold. Olive wood dries slowly and tends to crack. It is difficult to saw due to its irregular fiber and its hardness, but it is easy to work both by hand and with a machine.
Its roots are very long and deep.
Olives are squeezed to obtain olive oil.
