When it comes to Hanoi, you can't think of a very special dish of Hanoi. Among these gems, I think it is absolutely impossible not to mention Pho, which is also the dish that I am bringing up to today’s topic. It has become the comfort food for any residential Hanoian, Traditionally, it is also a breakfast dish. However, if you want to try Pho at any other time of the day, you can easily find a Pho place that is next or near to your house. Pho is a noodle that consists of the Pho noodle itself, the broth, different cuts of meat and a variety of herbs. So, when you come to Hanoi, do not hesitate to discover and try it by yourself.

It is a short, crunchy French baguette cut vertically and then stuffed with stuffings, like pork, carrot sticks, cucumber. The dish is loved by people around the world because of its unique taste. It can also be eaten plain (without stuffings) and dipped into condensed milk to give it a sweet taste. This dish, along with Pho and Bun bo Hue, is a must-eat if you ever visit Vietnam.

Fried spring roll is Vietnamese traditional food. We usually have it on important days, such as Tet holiday. Some people said that spring roll means harmony because the family members will be closer together. To make this tasty food, we need minced ground pork, carrots, onion, eggs, kohlrabi, glass noodles, dried wood-ear mushrooms, and rice wrapping paper. After preparing the ingredients, we will cook fried spring rolls. The first step is to rinse the ingredients. Second, peel and grate the vegetables. The third is bare glass noodles. Fourth, combine the ingredients and mix them with 2 egg yolk, 2 tsp of sugar, 1 tsp of broth mix, and 1 tsp of pepper, then leave to sit for about 15 minutes. Next, soften the rice paper for wrapping. Then, scoop a tsp of the mixture and roll them until the end. After that, deep-fry the spring rolls until they turn golden brown. The last step is to place them on a paper towel to drain off the oil. To make them taste better, we will serve fried spring rolls with fish sauce-a mixture of garlic, sugar, and chilies, ... Fried spring roll is delicious, and if you come to Vietnam, you should try them.

La Vong grilled fish is the name of a specialty dish originated from the Doan (Đoàn) family, who lives in the capital city of Vietnam, Hanoi. This fine jewel is definitely not a foreign concept to residents of Hanoi, as it is an extremely famous dish for people all over the country. This is a dish made from fish (typically made from bagridae) which is apart of the catfish genus. In order to make this dish, the fish is cut into pieces, purified then marinated in a turmeric-based sauce, which is often mixed with herbs and spices. It is then slightly grilled over charcoal. The dish is then served on a heated pan coated with marinade sauce and herbs like dill, basil or scallion, may or may not be included, but i recommend adding some to enhance the flavor and the overall quality of the dish. It can also be eaten with vermicelli rice noodles (Bún in Vietnamese) and peanuts. La Vong grilled fish is considered an exquisite delicacy of Vietnam, more specifically Hanoi, as most of the time it’s served in restaurants, and is not found in street food. So, you should absolutely put this on your “must-eat list”, and when you have the chance to visit Hanoi, don’t be hesitant about experiencing this dish, as it is definitely worth a try!

Mì Quảng is known to be the culinary soul of Quang Nam province in central Vietnam for a long time. Yellow or white colored noodles mixed with shrimp, pork or vegetables topped with grilled rice paper and spices, this dish is guaranteed to give you a big explosion of flavor. Unlike other Vietnamese noodle dish in Vietnam which broth covers most of the noodles, Quang noodles has an unique type of broth that you can barely see or slurp during your time eating. This soup is based of pork and fried shrimp, although some regional and family recipes will use chicken or duck. Nonetheless the base, Quang noodles soup has a slightly sweet and smidgen spicy flavor blending in with the richness of the broth, giving a lovely after taste that one can never forget. The noodles is described as a thicker version of Pho noodles, which is made with grounded rice, some add turmeric powder to add a bright yellow color to the noodles. Mì Quảng is served with fresh herbs like basil, cilantro, scallions, Vietnamese coriander or sliced banana flower. Crunchy peanuts and toasted sesame rice crackers are added on top giving a nice crunch to it. Personally, I like mine with some pork sausages, shredded pork rinds and a hint of lime and chili peppers. Mì Quảng brings out the feeling of genuineness and simplicity just like the people in central Vietnam, one that is hard to come across in modern dishes. If you ever have an opportunity to visit Quang Nam - Da Nang area, trying Quang noodles is a must to fully feel the culture of this land.
