Cover with water and heat over low heat.</div><div>Transfer ingredients and 1/3 of the cooking water to a blender and blend to a sauce.</div><div>Pour sauce into a large pot, season with salt, and cook over medium heat for about 5 minutes until slightly reduced giving the flavors time to meld. Keep warm.</div><div>In a large skillet, place about 0.3 inches of oil. Fry half of the tortilla triangles for about 3 minutes until slightly brown.</div><div>Repeat previous step with leftover tortillas.</div><div>Drain fried tortilla triangles on a paper towel-lined plate to remove excess oil.</div><div>Remove ¾ of oil from the skillet and place tortilla triangles back in.</div><div>Add onion and cover. Let cook for about 4 minutes until translucent. Stir constantly making sure the ingredients do not stick or burn.</div><div>Pour in sauce and cook for 3 more minutes stirring constantly.</div><div>Serve quick green chilaquiles topped with cream, queso fresco, and chopped cilantro.</div>]]></description>
