         <description><![CDATA[<div>V  B<br>So along ago, in 1025. Originally the cribs were exposed in the churches. The shepherds were made of marble, then, with the passing of time , of wooden and finally of terracotta or tassel. They rappresented Mary, St. Joseph and Baby Jesus inside a cave made of hard stones. At the end of 600 and beginning 700, the cribs were set up in noble and rich houses. New scenes ( taverns, hotels and shops ) and characters ( Neapolitan miserly and animals ) were introduced. </div>]]></description>

         <description><![CDATA[<div>La Cantata dei Pastori<br>La Cantata dei Pastori, scritta da Andrea Perrucci e pubblicata nel 1698 con il titolo " Il Vero Lume tra l'Ombre, ovvero la Spelonca Arricchita per la Nascita del Verbo Umanato "<br>E' un'opera che narra il viaggio di san Giuseppe&nbsp; e della Madonna verso Betlemme e degli agguati, dei tranelli dei Diavoli che vogliono impedire la nascita di Gesù.          <description><![CDATA[<div>Hanno  forma di rombo, sono fatti con farina, zucchero,acqua, granella di mandorle, miele, pisto e sono ricoperti di cioccolato o glassa bianca, possono essere anche imbottiti con fichi secchi.<br>Sapete perchè si chiamano cosi?<br>Secondo alcuni, il loro nome deriva dal " MOSTO " che i contadini usavano per far sì che questi biscotti fossero più dolci, secondo altri invece, dai " MUSTACCHI " ( baffi ) di cui ricordano vagamente la forma e il colore.</div>]]></description>

         <title>Paste reali ( una delizia per pochi...almeno in origine )</title>

         <description><![CDATA[<div>Le prime paste reali furono prodotte nei  conventi e da allora gli ingredienti sono gli stessi : mandorle, zucchero, ostie.<br>Si racconta che il re Ferdinando IV di Borbone, un pomeriggio, andò in visita al convento delle suore di San Gregorio Armeno. Terminata la visita, le suore lo invitarono nel refettorio, dove c'era un buffet con aragoste, pesce arrostito, pollo, fagiano e frutta. Le suore , sapendo che il re era un golosone, lo invitarono ad un assaggio. Il re non voleva, ma le suore lo convinsero.  Grande fu la sorpresa di Ferdinando IV , quando si accorse che tutto quello che c'era sul buffet erano dolci gustosissimi,  fatti con pasta di mandorla e dipinti a mano!</div>]]></description>

         <description><![CDATA[<div>Questi dolcetti sono proprio di in paese vicinissimo a Scafati, sono di Castellammare.<br>La leggenda racconta che nel periodo natalizio, un monaco bene in carne, girando per le strade dei quartieri poveri di Castellammare, distribuisse questi dolcetti ( fatti con mandorle, farina, miele, cioccolato fondente e diavoletti di zucchero colorato ), che  nasconedeva nelle larghe maniche del suo saio, ai bambini che incontrava per le strade. </div>]]></description>

         <description><![CDATA[<div>Questi biscotti hanno la forma di ciambella e sono fatti con mandorle, farina, zucchero, canditi e pisto ( cannella, chiodi di garofano, coriandolo , anice stellato e noce moscata )<br>Sapete perchè si chiamano così?<br>Il loro nome deriva dal francese ROCAILLE, per la forma simile a una conchiglia.<br>I roccocò sono i dolci che concludono il pranzo dell'8 dicembre e arricchiscono le tavole dei campani fino a tutto il mese di gennaio.<br>Sono dolci piuttosto duri , per cui si usa intingerli nel vino bianco o rosso , nel vermouth o nel marsala.<br>Si dice ( la tradizione )che furono preparati per la prima volta nel 1320 dalle monache del Real Convento della Maddalena a Napoli nella prima domenica di Avvento. </div>]]></description>

         <description><![CDATA[<div>Sono fatti con : farina, uova, burro, scorza di limone grattugiato, miele, zucca secca, diavolilli, olio o strutto e hanno la forma di piccole sfere.<br>L'origine di queste "palline fritte " è antichissima, greca! Il nome struffoli, deriva da " strongoulos " ( di forma   tondeggiante ) e la tradizione vuole che furono portate a Napoli dai greci al momento della fondazione della città di Partenope ( antico nome di Napoli ). La loro diffusione avvenne in epoca moderna ad opera delle suore dei conventi napoletani ( Croce di Lucca e Santa Maria dello Splendore ), che preparavano gli struffoli per offrirli come dono natalizio alle famiglie nobili che si erano distinte per atti di carità.<br><br><br><br><a href="https://youtu.be/A2hVkAT_TSE">https://youtu.be/A2hVkAT_TSE</a><br><br></div>]]></description>

         <description><![CDATA[<div>- Qual è il cenone  tradizionale ?<br>- La vigilia qui da noi a Scafati, ma in tutta la zona vesuviana e dell'agro nocerino-sarnese,  si mangia " di magro ", cioè senza carne.<br>- Quali sono le pietanze del cenone ?<br>- Le pietanze sono molte , perchè un cenone che si rispetti , dura diverse ore . Per antipasto la tradizione vuole la pizza di scarole , fatta con l'impasto della pizza e  scarole condite con olive , capperi e pinoli. A voi bambini le scarole non piacciono perciò , quest'anno,  preparerò un misto di verdure grigliate  e insalata di mare con polpo, alici e salmone marinati.<br>Per primo piatto,  spaghetti con le vongole , non so ancora se li preparerò in bianco o appena appena macchiati con un po' di pomodorino. So che nei tempi passati,  poichè le vongole costavano molto, gli spaghetti venivano conditi con la " colatura di alici "  ( Cetara, famosa per le alici, è a poche decine di chilometri da qui ... )<br>Per secondo :  pesce ( spigola o orata ) al forno o all'acqua pazza. La tradizione  vuole frittura mista ( gamberi, calamari e merluzzetti ) ma ancor di più baccalà ( ben ammollato )  e capitone  fritto.<br>Per contorno l'insalata, ma non la solita lattuga... l'insalata  è  " di rinforzo "<br>- Nonna ma che significa " di rinforzo " e perchè ?<br>- Chiara, ti ho già detto  che   il pranzo della vigilia è " di magro " ( leggero ??? ) e  bisognava creare una pietanza  " a rinforzo ", a sostegno di tutto il resto e poichè questa insalata si consuma nell'arco di diversi giorni, per conservarla, basta e bastava " rinforzarla " aggiungendo,  a mano a mano, altre verdure/ ortaggi e l'aceto.  <br>- Quali sono gli ingredienti  " dell'insalata di rinforzo " ?<br>- Cavolo lesso condito con acciughe salate, olive verdi e nere,  " papaccelle " ( peperoni rossi e verdi, dolci e piccanti )  e giardiniera,  il tutto sotto aceto.<br>- Come si conclude il cenone ?<br>- Con la frutta fresca : mandarini, uva e melone gialletto  o melone di pane e la frutta secca , " 'o spass " : noci, mandorle, fichi secchi, nocciole e datteri.  E per finire, dolci a volontà! Struffoli, susamielli, raffaioli, mostacciuoli , roccocò e da bere il nocillo ! </div>]]></description>

Stavi a casa e con chi ?<br>- Beh, c'era l'usanza di fare il cenone a cui partecipava tutta la famiglia ( e si era in tanti ) e dopo aver mangiato si giocava a tombola. Io vincevo sempre e  ricordo con piacere quelle serate perchè giocavo , chiacchieravo, ascoltavo i " grandi " che diventavano anche loro un po' bambini : erano scherzosi, più sereni ...<br>- C'era allora un'usanza per cui vi riunivate durante le feste di Natale ?<br>- Sì, ci riunivamo a casa di nonna e qui i " grandi " ci davano i regali. Noi bambini eravamo felicissimi perchè ricevevamo caramelle da tutti...<br>- A scuola abbiamo scritto la lettera ai genitori e a Babbo Natale, tu hai mai scritto la letterina ?<br>- Non ho mai scritto la letterina ai miei genitori e a Babbo Natale, e lo sai perchè ? Io sono andata a scuola fino alla seconda elementare e so appena leggere e scrivere !<br>- Oh, ma se dovessi  o potessi scrivere una lettera ora, che cosa mi detteresti ?<br>- Beh, vorrei che scrivessi : " Cari parenti, vi do gli auguri di buon Natale e vi ringrazio di essere qui con me in questo giorno.          <description><![CDATA[<div>- Qual è il pranzo tipico di Natale ?<br>- Dopo il cenone della vigilia e la nottata trascorsa quasi tutta a giocare a tombola in attesa della mezzanotte, il 25 ci si alza tardi e il pranzo dovrebbe essere con meno portate della vigilia. Ma dovrebbe essere, perchè il pranzo di Natale è tutto, o quasi tutto a base di carne...<br>- Si ma cosa vuole la tradizione ?<br>Beh, l'antipasto spesso non c'è o al massimo è fatto con affettati : salame, capicollo, prosciutto , formaggi e mozzarella.<br>- E il primo ?<br>Mia nonna  preparava, mia madre ed io prepariamo  " 'a mnest' maritata "  ( la ricetta è del 1500! ) si chiama "maritata " perchè le verdura  ( cicoria, broccoli amari, scarole ) si sposano , " si maritano " con il brodo fatto con la carne  di pollo o di gallina. Dopo il brodo , cucino i tortellini o la pasta al forno  con le  polpettine fritte, oppure la lasagna / i cannelloni o il sartù di riso ( un timballo di riso imbottito con polpettine, salsiccia, piselli, uova sode e condito con ragù ).<br>- Mamma mia!  E per secondo ?<br>Il secondo è di carne. Capretto, pollo o gallina al forno con contorno di patate dolci e piselli. Alcuni preparano poi una  grande  frittura con panzarotti, mozzarelline, scagliuozzoli, pizzelle e i micciarielli. <br>- Perchè questa frittuta ?<br>-  Questa, in verità si chiama " il  gran fritto" e  ha origini antichissime. Si dice che i cuochi che lavoravano nelle case dei nobili, per non buttare gli avanzi dei pranzi dei giorni precedenti , li utilizzavano friggendoli.<br>- E i contorni ?<br>- Sono gli stessi della vigilia , cioè insalata " di rinforzo " e 'o vruoccolo 'e Natale o " vruoccolone " lesso e condito con aglio, olio e limone.<br>- E per concludere ?<br>- Come ogni pranzo che si rispetti, frutta fresca ( mandarini, arance, uva, melone di pane )  e secca " i seccamenti  " o " 'o spass "  : noci, datteri, fichi secchi, mandorle e nocciole. E poi, i dolci : struffoli, roccocò, mustacciuoli, pasta reale, sapienze, sosamielli, raffaioli anche imbottiti e da bere il rosolio o altri liquori dolci. </div>]]></description>

         <description><![CDATA[<div><em>New Year’s Eve is one of the most popular holidays in Turkey. The New Year’s Eve traditions in this country include a family dinner, a national lottery drawing and a countdown to midnight. New Year’s Eve falls on December 31 in the Gregorian calendar.<br></em>Many people in Turkey start celebrating New Year’s Eve with a large family dinner. The main course is traditionally a roasted turkey. Variety shows on television begin in late afternoon and continue until early morning of the next day. Many people play games while waiting for the clock to strike midnight. State TV channels announce the winning numbers of a New Year’s national lottery just before midnight. Many people in Turkey try to buy a New Year’s lottery ticket because it promises a large sum of money to the winner. Many people also congratulate each other, toast to a New Year and exchange small gifts at midnight between New Year’s Eve and New Year’s Day.<br><br></div><div>Hotels, restaurants and nightclubs offer special entertainment programs on New Year’s Eve. Most places require early reservations. Some people go to city centers late on December 31 to watch the traditional fireworks. New Year’s Eve ends with a countdown to announce the arrival of a new year, and celebrations continue until the morning of January 1.<br><br><br></div>]]></description>

         <description><![CDATA[<div><br>What makes this roasted <a href="http://www.myrecipes.com/turkey-recipes/">turkey</a> a New Year's-worthy recipe is the rich, breaded stuffing of ham, veal, apples, and walnuts. Cajun seasoning gives it a kick.<br><br></div><div><strong>Ingredients<br></strong><br></div><ul><li>1 (10- to 12-pound) turkey</li><li>2 tablespoons salt</li><li>1 tablespoon pepper</li><li>1/3 cup balsamic vinegar</li><li>1 tablespoon minced garlic</li><li>2 tablespoons olive oil</li><li>2/3 cup butter or margarine</li><li>1 1/2 cups chopped onion, divided</li><li>1 pound ground veal</li><li>1/2 pound ground boiled ham</li><li>6 white bread slices</li><li>1 cup milk</li><li>1 large egg, lightly beaten</li><li>1 cup chopped apple</li><li>1 tablespoon Cajun seasoning</li><li>1 teaspoon salt</li><li>1 teaspoon pepper</li><li>1 cup raisins</li><li>1/2 cup chopped walnuts</li><li>1/2 cup minced fresh parsley</li><li>1 1/2 cups sweet vermouth</li><li>1/2 cup honey</li><li>Garnishes: fresh parsley sprigs, kumquat leaves, kumquats</li></ul><div><br></div><div><strong>How to Make It<br></strong><br></div><div>Step 1</div><div><br>Remove giblets and neck from turkey, and reserve for another use. Rinse turkey with cold water, and pat dry.<br><br></div><div>Step 2</div><div><br>Place turkey in a shallow dish. Stir together 2 tablespoons salt and next 4 ingredients; pour over turkey. Cover and chill at least 6 hours.<br><br></div><div>Step 3</div><div><br>Melt butter in a large skillet; add 1/2 cup onion, and saute until tender. Add veal and ham; cook over medium heat, stirring often, 5 minutes. Remove from heat.<br><br></div><div>Step 4</div><div><br>Remove crusts from bread, and discard; crumble bread. Combine breadcrumbs, milk, and egg in a large bowl; stir in apple and next 6 ingredients. Stir in onion mixture.<br>Step 5</div><div><br>Remove turkey from refrigerator, and brush cavity with oil mixture. Spoon stuffing into cavity; truss turkey using string. Lift wingtips up and over back, and tuck them under bird. Place turkey, breast side up, into a large roasting pan.<br><br></div><div>Step 6</div><div><br>Cover turkey with aluminum foil, and bake at 400° for 30 minutes. Reduce heat to 350°, and bake 2 hours, basting occasionally with pan drippings.<br><br></div><div>Step 7</div><div><br>Process remaining 1 cup onion, vermouth, and honey in a blender until smooth. Pour mixture over turkey, and bake 1 more hour or until meat thermometer inserted into turkey thigh reaches 180° and stuffing reaches 165°.<br><br></div><div>Step 8</div><div><br>Boil (with electric oven door partially open) until golden. Garnish, if desired.</div>]]></description>
