Several studies  have been done to determine if this is true  and food left on a surface, for a longer period of time does collect more bacteria, and food left on other floor surfaces dirtier it becomes. According to the article Schaffner stated that moisture drives the transfer of bacteria from surface of food, the wetter the food, the higher the risk of transfer.
