There are many different ways to heat treat milk. Examples of this include:
- Pasteurization: HTST is the normal method. This means 'high temperature, short time'. Milk is heated for 15 seconds to a temperature of 72 degrees Celsius. It is then cooled rapidly to below 10 degrees and bottles or put into cartons. It has to be stored in a refrigerator.
- Ultra Heat Treated (UHT): Milk is heated rapidly for 1 second to 132 degrees and then rapidly cooled and packed under sterile conditions. This milk has a long life and can be stored unrefrigerated for about six months. Once it is opened it must be treated the same way as fresh milk.

Yogurt is made from milk. It is made by harmless edible bacteria to milk, which causes it to ferment. This means the carbohydrates in the mil, which is lactose, is converted to lactic acid by the bacteria. The lactic acid will set the milks protein, thickening it. The acid will also give the yogurt its characteristically tangy flavor.

Milk and dairy products are concentrated calcium sources, and we know calcium fortifies bones and prevents osteoporosis. The study, conducted with over 60,000 women (age 39-74) and 45,000 men (age 45-79) found that too much milk – three or more glasses a day – was not only associated with mortality but also an increased risk of fracture and hip fracture. Researchers found this surprising association after following the men and women in this study for 22 and 13 years respectively. Over this time, study participants completed questionnaires about their milk-drinking habits. After adjusting for a other variables, they found that women who reported drinking three or more glasses of milk each day nearly doubled their risk of death in relation to women who drank less than one glass each day. Men were not as affected as women, but those who drank three or more glasses of milk each day still showed a significant increase in mortality.

In order to grow and stay well, your body needs protein, carbohydrates, fats and a wide variety of vitamins and minerals. Milk is an excellent source of protein, calcium and Vitamin D. Although you can get plenty of protein from other foods, it's hard to get all the calcium and Vitamin D you need without drinking milk. The human body needs a huge variety of nutrients, but calcium is certainly the mineral you would find in most abundance. As an adult, you would expect to find 1200 grams of calcium in your bones. This could equate to as much as two percent of your overall body mass. It can be fairly easy to get enough calcium from your diet to keep your bones and the rest of your body satisfied. The amount you need to consume depends on your age, size and medical factors, but most adults need at least 700 milligrams a day.
