There is a small flame at the bottom of the tray containing the food. Since the trays are made of metal, which is a good conductor of heat. Using the method of radiation, the thermal energy from the fire is transferred to the food in the metal tray. Then, the heat from the bottom of the food rises to heat up the rest of the food above, using the method of convection.

Convection occurs when particles with a lot of heat energy in a liquid or gas move and take the place of particles with less heat energy. Heat energy is transferred from hot places to cooler places by convection. Liquids and gases expand when they are heated.

A chafing dish is a container you can use to keep finished dishes warm. You place the container the dish is in into a frame, and you place a heat source under the container like a can of Sterno or an electric burner to keep the food at the right temperature. You can use this type of food warmer for parties to make sure your food keeps a consistent temperature for the whole evening.

The term chafing dish is a translation of the French word Rechaud. This term indicates any dish with an open flame which is used to warm or prepare dishes at table. While most chafing dishes are large enough for a side dish or entree, you can also get small round warmers consisting of a bowl and stand. These average around 6 inches in height, the diameter is around 5.5 inches, and they weigh a little less than a pound and a half. You use a tea light placed in the stand to warm food, and this type of dish is great for keeping a sauce warm, for instance. Especially if they're made of a beautiful material like copper, food warmers can act as decorative centerpieces on your buffet.
