Every song has a change in dynamics even if its very small. Some songs have far more dynamic changes than others but basically its just the change in tone, pace, pitch or instrumentation in a song. Songs go low to high, loud to quiet, drum to guitar, these are all examples of dynamic changes. As for storytelling, most songs tell a story and have a theme or message behind them.
