Turkey: Noel Baba
Saint Nicholas was born and died in Turkey, but most people there do not celebrate Christmas. He had a large inheritance which he would share with the poor by tossing bags of gold coins through a window. Once, he climbed through a chimney to deliver the gift because the window to the home was shut. He left it in a sock that was drying by the chimney, which is how the stocking tradition was born.

Children burst into tears as the demons snatch them up, warning them not to be naughty or lazy. They do not place them under the Christmas tree, however, even though they can be found in the streets of Japanese cities as well as in Japanese homes. Instead, Santa Claus puts presents in socks. Christmas is considered a romantic holiday by the Japanese. Santa-san gets no particular treats, but if he's lucky he might get to sample some of the food and drink that the Japanese like to celebrate Christmas with – KFC and a special edition version of Pepsi that tastes of strawberry cake. Unlike in the U.S., in Japan the main event is Christmas Eve instead of Christmas Day. Many Japanese celebrate Christmas by going on dates or holding informal Christmas parties. Chicken is the go to meat for most people, including some popular fried chicken offerings.

In early December, children write a 'Carta al Nino Dios' (letter to baby jesus) asking for what they would like. The letter is placed in a pesebre. Ninos Dios would give the good children what they asked for in the letter. When it comes to the bad children, he won't give them what they asked for. Ninos Dios leaves the gifts at there homes. The main Christmas meal is eaten on christmas eve night and its called 'Cena de Navidad'. The dishes often include 'lechona' (pork stuffed with rice and peas), ham, turkey or chicken soup called 'Ajiaco Bogotano'. A very popular Christmas dessert is 'Natilla' which is a set custard.

By Alejandro Barrera

In Poland, they celebrate Mikołajki, or Saint Nicholas Day in English. On the 6th of December, Saint Nicholas comes with presents for the children in Poland.

This holiday honors Saint Nicholas who was a 4th century Bishop of Myra in Lycia, which is in modern day Turkey. This saint was known for his secret gift giving, which is why he is often associated with Santa Claus.

As Mikołajki approaches, Polish children will write letters to Saint Nicholas where they tell him about their good behavior and the gifts they wish to receive. Traditionally, Saint Nicholas arrived bringing fruit such as apples and oranges. He would ask the children to recite their catechism and reward them with chocolate, heart-shaped gingerbread cookies. In bakeries around Poland, you will find pierniczki or gingerbread cookies that are cut out in a Saint Nicholas shape and decorated with white frosting. Naughty children however, usually receive a little twig.

Gifts are usually hidden under pillows or inside of shoes. The night before, children often clean their shoes so they are ready to relieve gifts. This is similar to the Western traidition of leaving milk and cookies out for Santa Claus. Saint Nicholas then arrives dressed as a bishop in bright clothing carrying a shepherds staff. It is said he arrives from heaven with an angel helper and travels by foot, horse, or in a sleigh pulled by a while horse as he visits each home. The next day in school on December 6th, there is often a small gift exchange that takes place between students!
