         <description><![CDATA[<p>Frito is a traditional dish from the Costa Grande Guerrero. It's made with pork ribs and  guajillo peppers. Tamales nejos are made with corn and a pinch of ash, and they are wrapped in  banana leaves instead of dry corn <a rel="noopener noreferrer nofollow" href="http://leaves.You">leaves. You</a> can also add rice and beans as side dishes. </p><p>Eating Frito at my grandmother's house on a rainy day is one of my most precious memories of her. </p>]]></description>

         <description><![CDATA[<p>Chilaquiles are a traditional breakfast in Mexico, at your house, at my house. They're made with fried tortilla chips, and you can add red or green salsa, that choice defines who you are. You can also pair them with chicken, cheese, and sour cream.</p><p>Eating Chilaquiles at my house with my family on Sundays is my one of my most precious favorite childhood memories.</p>]]></description>

         <description><![CDATA[<p>The torta ahogada is a traditional dish from Jalisco, specifically from Guadalajara. It is made with pork—usually chopped—but it can also be made with other types of meat. The meat is placed inside a bolillo, which is typically salty, and then it's covered with a tomato sauce and a chili sauce, usually made from chile de árbol.</p><p>Eating it on Saturdays, whether at family events or just as a meal, is a cherished memory for me. It’s also special because I had my first date with my girlfriend while eating this dish.</p>]]></description>

         <description><![CDATA[<p>Chilaquiles are a traditional Mexican dish made with fried corn tortillas, salsa (green or red), and topped with cream, cheese, and sometimes a fried egg or shredded chicken but I prefer chicken. </p><p>They are usually served for breakfast and can be accompanied by refried beans. I like the chilaquiles with green salsa and them is made with tomatillos, green chilies, garlic, and cilantro.</p><p>Eating chilaquiles with my family on Sunday mornings is one of my favorite memories. </p>]]></description>

         <description><![CDATA[<p>Chilorio is a traditional dish from Sinaloa. It's made with pork, cooked with chili and garlic. The meat is tender and red in color. My mom only cooks chilorio at home. We eat it with tortillas, rice, or beans. Sometimes we use it to make tacos. I like it because it's spicy yet very flavorful.</p><p>I eat chilorio once a week. It's one of my favorite dishes. It reminds me of my childhood at the beach and my happy days.</p>]]></description>

         <description><![CDATA[<p>Torta ahogada is a traditional dish from  Guadalajara. It's made with a salty bread roll crispy on the outside and soft on the inside stuffed with pork carnitas and completely "drowned" in a spiced tomato sauce. For those who enjoy spicy food, a second, much spicier sauce made with chile de árbol can be added.</p><p>It's accompanied with pickled onions, a squeeze of lemon, and sometimes refried beans. The key is to eat it with your hands, without fear of getting dirty, because a good torta ahogada always drips with sauce. </p><p>Going to eat tortas ahogadas with my family every Sunday is a fond memory.</p>]]></description>

Aguachile is a traditional dish from northwest Mexico and is widely eaten here lately. It is prepared with raw shrimp marinated in lemon juice, mixed with fresh green chilies, cilantro, cucumber, and sometimes mango. Red onion is added for extra flavor. The shrimp are cooked with the acidity of the lemon juice, resulting in a fresh and spicy dish that is served with tostadas. You can also add avocado for a creamy touch.
