(GF/DF/EF/NF)
This is a go-to at our house. Quick and easy. And yummy (even for those who don't love Kale!).

1 bunch of Kale
1/2 avocado (soft), diced
1/4 c of oil
1/3 c lemon juice
1 tsp garlic
Salt to taste
1/2 c sunflower seeds (deshelled) (or hemp seeds or pepitas)
1 c sliced strawberries

1. Kale - devined and chopped into smallish pieces
2. Make dressing mixing oil, lemon juice, garlic and salt.
3. Add avocado and dressing to the kale and smash it all together (yes, it's messy, but it's worth it!). Make sure to massage it all well until the avocado is dissolved and the kale is well covered.
4. Let it sit for about half an hour before serving.
5. Just before serving, add seeds and sliced strawberries.
6. Serve and enjoy!

Oh man, can't find a picture. This was my staple in Spain:
1. Small baguette-like bread (or slices of sourdough bread / french bread, etc.) - toasted
2. Grate a tomato (leave the unused skin aside)
3. Put the grated tomato on the bread, like a jam.
4. Drizzle a little olive oil over it
5. Add salt to taste.
YUMMMM

My son tried this with GF flour just before the chaos started and it was SO good (here's the pic!). It's a quick prep, a bit longer bake.
