Then maybe she added almond flavoring to try and disguise the poison, I also believe that she did the same thing to Mr.Temple and Mr. Mullholland.  In the story it states when she brings Billy his tea " She was holding it well out in front of her, and rather high up,as though the tray were a pair of reins on a frisky horse." I believe that she was holding the tray up high because she did not want to breath in the poison.
