Most grains have similar dietary properties; they are rich in carbohydrates but comparatively low in protein and naturally deficient in calcium and vitamin A. Breads, especially those made with refined flours, are usually enriched in order to compensate for any nutritional deficiencies in the cereal used. The cereals most commonly cultivated are wheat, rice, rye, oats, barley, corn (maize), and sorghum.

In Cambodian refugee camps, when children are asked where rice comes from, they answer, "from UN lorries." They have never seen a rice field. One day, these children will have to learn to live in Cambodia, i.e., they will have to learn to cultivate, to plough, to work the land. "Neak sre" tries to share this way of life, to demonstrate the fragile equilibrium on which it lies and the freedom it represents.
