I have found that I add my own spin on a lot of it, and have even re-created some of the topics to be more applicable to my own class.

Yes, it takes a little extra time to color, cut, glue, but they're KIDS! They should be coloring, cutting, and gluing and with the lack of fine motor skill practice, this is a perfect time to do this. There are always things you dislike doing, possibly because you're not good at them, but that doesn't mean that you should be able to get out of doing them. It is unreal to expect all students to be comfortable with everything you do.
